If the weather outside is enough to make you groan and pull the blanket over your head, never fear. Bored and Hungry has your back with a stomach- filling warm meal sure to keep you cozy and comfortable in the cold weather.
Creamy Tomato Soup with Apple and Cheddar Melts takes about an hour to make and serves 4. Treat yourself with the delicacy of warm, homey food to sate the appetite and help you to bear through the frozen weekend.
For this recipe, you will need:
Tomato Soup
- 2 tablespoons unsalted butter
- 1 onion, coarsely chopped
- 1 to 2 cloves garlic (optional)
- 2 (14-ounce) cans whole peeled tomatoes
- Coarse salt and freshly ground pepper
- 1 1/2 cups Basic Chicken Stock, or water
- 1/2 cup heavy cream (optional)
Apple Cheddar Melts
- 8 slices good-quality white bread
- Butter, softened, for spreading
- Prepared chutney, such as Patak’s Major Gray Mango Chutney
- 12 ounces sharp Cheddar, shredded or sliced
- 1 Gala or other crisp apple, peeled and thinly sliced
First, melt the butter in a medium stockpot, adding onion and garlic and stirring for about 3 minutes.
Add the tomatoes, juices and all, and the stock. Add salt and pepper to season to your taste. Reduce heat to a simmer and leave for about 10 minutes before transferring the mixture to a blender.
Puree the tomato mixture and then return to a fresh pot over a low heat. If using cream, whisk it in. Ready to serve!
For the apple and cheddar melts, spread butter on one side of each piece of bread and chutney on the other. With the chutney sides facing inwards, fill the sandwich with cheese and apples over medium heat until golden brown and melted.
